No, there's actually American pasteurized processed cheese product which is a separate food from American cheese. The Traditional Kraft singles are cheese product, however you can get a separate type of Kraft (and other brands) cheese that's actually categorized by the FDA as cheese.

Genuinely curious: how many other types of cheese have you tried before forming that opinion? I love Grilled Cheese, but I also happen to be French and make them with many different sort of cheese (not only from France, but also Italy, Belgium, Switzerland, even the UK) and I'm pretty sure there are options among those you'd prefer to Kraft Slices.

I love some fancy cheeses. Like I'll drop money on nice cheese. But if I want grilled cheese usually I want that basic comfort food. Some Kraft singles grilled cheese and tomato soup, fire. That or on a cheeseburger is the only ways I'd eat them.

You can use Sodium citrate to give real cheese the melting properties and texture of American cheese. I usually make a cheese blend out of vintage cheddar, parmesan, gouda and gruyere.

Nah, you just heat a little water in a pan, add the sodium citrate and stir until it dissolves. Then add your grated cheese a bit at a time until it's all melted together. Then pour into a mold and refrigerate. You can then cut slices off to make a grilled cheese or Mac & cheese. Except it'll actually taste of quality cheese instead of plastic

You're right, this is unpopular because it absolutely does not taste better. Unless you are aggressively on a processed, no whole food diet. Kraft slices taste nasty. But if you are living on freezer food, boxed mac and cheese and other processed food it wouldn't be a noticeable taste because your palate is used to it and the texture would seem better.

I agree but There's more than enough emulsifiers in a craft single to emulsify other real cheese when melted together for Mac and cheese. You can buy a cheese emulsifier separate and premelt and let cool a bit with any cheese you like to use on a good grilled cheese.
